Most Specialty Coffees from Colombia are processed using the traditional “washed” method, where all the pulp of the sweet fruit (mucilage) is removed from the coffee beans before they are dried. The Honey washed process leaves the pulp of the sweet fruit on the bean.

Gustavo prepares his honey washed beans by spreading them out on the patio. They are dried in the sun until they take on a golden yellow color from the sugars. The honey wash process gives the coffee a more complex and elegant flavor profile with a sweeter taste than the typical washed process.

These special Arabica beans are artisan roasted in small batches to a Medium-Dark, where the slight caramelization of the natural sugars in the bean gives a touch of roastiness while still retaining its natural flavor character. The coffee is very smooth and sweet and with notes of honey, tangerine, red apple, caramel, and chocolate.
